Summer Vegetable Seafood Salad

 

Serves 4


 
Main Ingredients
3 tomatoes cut into chunks
1/2 sliced red onion
2 cucumbers into chunks
1 sliced green peppers
10 fresh basil leaves
fresh oregano leaves
400 grams of squid or octopus - pan-fried in 2 Tbsp ELEA® Extra Virgin Olive Oil

 
Dressing Made separately:
3 Tbsp balsamic vinegar
1/4 tsp of sugar
4 Tbsp ELEA® Extra Virgin Olive Oil

 
Put the main ingredients in a bowl or tupperware container, one you can shake or stir. Mix the dressing and add it into the bowl of main ingredients. Toss it vigorously so the juices from the tomatoes come out and mix with the dressing. Serve with a side of rice! Delicious and heart healthy. One serving is about 300 calories.
